Twenty-five years experience has found a new home!
Dutch Hedrick has lived a life dedicated staying on top of the latest techniques in roasting specialty coffee. In that time, he's seen a lot of changes -- what works and what doesn't.
Beginning at Raleigh's Cup-a-Joe in 1993, he embarked upon a journey which, in ten years, would bring him to the art and science of roasting coffee -- first for Counter Culture Coffee and later for Joe Van Gogh.
In 2018, he became an independent roaster, starting Rube's Good-Brain Coffee in his family home, located in Kittrell, North Carolina.
(Kittrell is about thirty minutes north of Raleigh.)

Because we roast in small batches, we're able to devote special attention to every roast. Therefore, we can assure you that every bag is of the highest quality. Because every batch is roasted to order, there is no possibility of our coffees becoming stale as it would on supermarket shelves. Coffee in grocery stores often has been there for weeks or months, losing precious flavor all the while!
Yes -- even when coffee has been sealed in bags, it continues to de-gas, and therefore, lose its flavor. After two weeks, much of it is gone.
When you order with us, however, we'll roast your coffee only when you've ordered it. Then, we'll ship it out to you within 24 hours of us having received it; and no more than 24 hours before the postal service has picked it up.
Your coffee will be delivered to your doorstep 2-3 business days after it's been roasted.

Begins with Great Green Coffee
Although producing great coffee seems like alchemy, coffee roasters are not magicians. Unless the coffee begins with great green coffee beans, we cannot produce great roasted coffee. That's why it's very important for coffee roasters to be able to recognize great coffees from the start.
That is why we here at Rube's promise only to work with green coffee producers who have earned their respect over the many years we have been in the business. Relationships matter in coffee and those relationships are built on trust.
In the same way, we look to build similar relationships of respect and trust with our own customers.
